Locanda Appennino is in the centre of Umbertide, high on the Tiber river bank. Its origins date back to the 1880's, when the works for the Appennino railway started. The pleasant dining room has smaller more private part and the surprising, with vines overgrown terrace lined with flower pots, has a view over Tiber All meals prepared in the Locanda have their roots in the traditional Umbrian cuisine. The antique original recipies are followed closey in preparing our meals in the true "cucina mediterranea" style. Wewould like to say a few words also on "how" to eat some of our meals, in order to taste them best. The bread is brought to tou in " filette " and " panini ", warm and uncut because the bread is better broken by hand and immediately eaten. This way you can smell the fragrance, perfume and taste its goodness. The same issaid for the " torta al testo ". The roast meat, like chicken but mostly goose " in porchetta ", are best tasted by using your fingers to get the delicious and most tatsy meat of the bones. Also the " Arrabbiata " is well worth getting your fingers dirty for, while dipping your bread into the remaining sauce, so called " fare la scarpetta ". The particular of the goose "in pocrchetta" is its stuffing, made of the interiors and ears of a pig. These are, used this way, delicacies and not awful parts to be thrown away. The dessert are made with either cane sugar or honey, according to the recipe. We raccomanded to those who love dessert, to taste the " frittata di frutta " and the roasted bread with nuts and honey. The locanda breaths a natural, warm and original atmosphere due to the use of the soft colours, natural fabrics (lined and cotton) and natural materials (wooden furniture, plates of porcelain and glass). Some classical examples are: The wheat, wholemal and partly wholemeal is organically grown and then milled by the mulino Silvestri di Bevagna, using the antique milling method with millstones and water; The olive oil, from local producers, is supplied by the Mulino Bruni from Monte Acuto (Umbertide). This mill uses the cold extraction method only, supplyng therefore olive oil " extra vergine "; The honey is also locally produced by the Azienda Apistica Montecorona (Umbertide) where all bees are like "queens"; The wines are organically produced from Umbrian grapes, like the Gritti, Rocca di Fabbri and Podere Vaglie; The Bread, pasta and cakes are hand made in the Locanda, by the owners in the kitchen (open for wiewing). The meat is grilled " alla brace ". Laura and Elvira share a passion for genuine food and are constantly looking for ingredients that fit their standards. This does not only mean the ingredients come from organic producer, therefore free of chemical treatments, but also that the food is grown following the genuine traditional methods.
